For those who enjoy dancing folk dances for pleasure, Greece is a haven. Greece is unique in that there are scores, if not hundreds, of dance tavernas, that is simple restaurants open at night where people go with their friends or family, primarily to dance the dances of their place of origin. There is nothing quite like this in other European countries, for though local dances are danced in some places these dances have become urbanised and formalized, such as the waltz. Nowhere else is it customary for people to enjoy themselves by dancing their village dances in city tavernas, for these have been relegated to the sphere of folkloric and are performed only by dance troupes or companies.<\/p>\n

The fact that so many dance tavernas exist and flourish is yet further proof of the astonishing resilience of Greek dance in the wake of contemporary currents. It is even possible they might one day oust those centres playing European music, for in many provincial towns disco music is followed by local music towards the end of the evening when the customers are in a good mood. Perhaps we shall see something similar to the revival of reb\u00e9tiko, which some twenty years ago was only heard in a handful of obscure tavernas, while today it is synonymous with Greek music the world over.<\/p>\n

Tavernas playing demotic (folk) music cater for a specific clientele. They are not advertised or listed in the Yellow Pages, nor do they seek publicity, so most people are not even aware of their existence. Their regular customers tend to be co-villagers of the taverna-owner, who is often also a musician, and they spread the word among their friends. Only rarely does one see customers from other regions or towns, simply because this kind of music means little or nothing to them and they do not know how to dance to it. Thank goodness this is the case, for this ensures their uniqueness. Recently, some owners have, alas, begun including songs from other regions in the programme, in order to attract new customers.<\/p>\n

These tavernas are colloquially known as \"ta klar\u00edna\" (the clarinets), for those playing the music of the mainland, and \"ta violi\u00e1\" (the violins), for those playing island music, thus distinguishing them from \"ta bouzo\u00fakia\", where reb\u00e9tiko and light popular music is played. However, neither the Cretans not Pontics speak of their tavernas as \"oi lyres\" or \"oi kements\u00e9des\". Though most of them are in Athens, there are dance tavernas in most of the provincial towns also. They tend to operate only during the winter, since the musicians can earn more money playing at weddings and panigyria in the summertime. On weekdays there are few customers and one can dance comfortably, but at weekends they are filled to capacity by people of all ages, particularly families with children. Everyone dances at once and it is very rare for someone to order (parangeli\u00e1) a song and have the exclusive right to dance, as happens at \"ta bouzo\u00fakia\".<\/p>\n

In Pontic tavernas it is not customary to throw money to the musicians since the dances are group dances and the leader is not distinguished from the others, as is also the case in Thracian dances. Wherever the position of lead dancer is outstanding it is he who orders the song of his choosing and pays for this privilege. He then invites his friends or family to dance with him and in such instances people from other tables should only join at the end of the line. Otherwise, when the musicians play whatever they fancy, one can join the circle wherever one wishes, just making sure not to split couples and friends who have taken to the floor together. In general the atmosphere is relaxed, informal and unsophisticated, there is no showing off, no-one quarrels and prices are reasonable.<\/p>\n

In these tavernas lovers of Greek dance can watch and join in, in a much warmer ambience than that of a dance troupe rehearsal. There are, however, some disadvantages. Certainly anyone going to such a taverna to dance must know the dances beforehand, otherwise he is apt to be a nuisance if he tries to learn the steps on the floor. The food and service is usually mediocre, as indeed in all night spots offering entertainment, there is little or no heating (one is expected to keep warm by dancing) and the ventilation is rudimentary (one's eyes will smart from the cigarette smoke). But the main problem is the loud-speakers, which are invariably so noisy one has to plug one's ears with cotton wool.<\/p>\n

The songs played are not always authentic, the singers change the melody or sing their own amorous words, to bring the traditional songs up to date, for these never mentioned love explicitly. Table songs are rarely played, and of the dance songs those easiest to play are in great demand. All are played without improvisations and much faster than normal tempo, in order to whip up high spirits and finish more quickly, whereas the good musician - like the good dancer - is the one capable of executing slow rhythms.<\/p>\n

As soon as one enters such a taverna one can weigh up the orchestra from the instruments included. An electric organ, guitars and drum batteries do not bode well and, alas, are becoming all too common.<\/p>\n

Before going to a dance taverna it is best to telephone first, not to reserve a table but to make sure it is still open and that it has not changed its identity, or that it has not been hired by a society holding its annual dinner-dance.
